DESCRIPTION
Spelled is an old variety of wheat. The spelled grains mature in a thick shell to protect them from contamination. Spelled can be ground into a wholegrain spelled flour suitable for baking bread and cakes. Cooked and mixed spelled makes a great base for chops and pastes.

PREPARATION
Soak for a few hours beforehand and rinse the spelled in fresh, salted water in a ratio of 1:3 (1 portion of spelled to 3 portions of water) and boil for approx. 90 minutes
