DESCRIPTION
Spelt is an ancient wheat variety. Spelt grains ripen in thick husks, which protect them from contamination. Spelt can be ground to obtain wholemeal spelt flour, suitable for baking bread and cakes. Cooked and mixed spelt is a good base for cutlets and pastes.

PREPARATION METHOD
Cook the previously soaked for several hours and rinsed spelt in fresh salted water in a 1:3 ratio (1 portion spelt to 3 portions water) for about 90 minutes.
