DESCRIPTION

Spelt is an ancient wheat variety. Spelt grains mature in thick husks that protect them from contamination. Spelt can be ground to produce whole grain spelt flour, suitable for baking bread and cakes. Cooked and blended spelt is a good base for cutlets and pastes.

PREPARATION METHOD

Cook spelt, previously soaked for several hours and rinsed, in fresh salted water in a 1:3 ratio (1 portion of spelt to 3 portions of water) for about 90 minutes.
