Mole gruel is natural pollen mixed with bee secretions and formed into a so-called pollen intumescence. For this reason, it has a much higher nutritional value than the pollen itself.

The pollen is stored in the beehive under a layer of honey and wax so that no air can reach it. Less suitable fermentation processes then take place in it. It is a food source for young bees, larvae, and the queen.

It has a very rich composition and its components have a very high assimilability. Scientific studies have shown that bees that eat mustard are more resistant to microbial attacks and live longer than bees that feed only on pollen.

- Vitamins: K, A, C, D, E, P, B vitamins
- Minerals (including selenium, magnesium, iron, silicon, sulfur, manganese).
