Organic shiitake mushrooms, also known as Japanese hardwood mushrooms, are cultivated on dead hardwood logs. They are becoming increasingly popular due to their valuable nutritional properties. They are especially prized in Eastern cuisine. We recommend briefly heat-treating shiitake mushrooms (about 5 minutes), as otherwise they will harden. Depending on their intended use (e.g., for sauces), it's worth soaking them for about 30 minutes.
