Xylitol is primarily birch sugar but can also be derived from other plant products. It is a polyhydroxy or sugar alcohol, a derivative of xylose. Its structure stimulates the receptors responsible for the sweet taste on the tongue.
It occurs naturally in raspberries, strawberries, plums, and even cauliflower. Finnish xylitol is birch-derived xylitol. The term xylitol itself can refer to other fruits and vegetables. In such cases, it is mostly made from corn. Depending on the product it is derived from, there are different methods of extraction. Birch xylitol is produced through bacterial and yeast fermentation, while corn xylitol is made through biomass hydrolysis.
Xylitol, which looks like sugar and even has similar sweetness, differs mainly in calorie content. Its energy value is much lower—up to 40% less. 1 gram contains only 2.4 kcal. Its glycemic index is just 8, compared to conventional sucrose (GI = 70) and glucose (GI = 100). For this reason, xylitol does not raise blood sugar levels as much as regular sugar. Therefore, it is suitable as a sugar substitute for people who should exclude high-glycemic-index products from their diet but don't want to give up sweetening coffee, tea, or sweet snacks and cakes.
In food, xylitol is most commonly found in chewing gum and candies. It is increasingly used as a sugar substitute in healthier versions of sweets and cakes. Perfect for sweetening coffee, tea, smoothies, desserts, and ice cream. It is heat-resistant, so we can confidently replace sugar with xylitol in recipes.
The presence of xylitol in chewing gum is no coincidence. When consumed, xylitol does not ferment with bacteria and therefore does not produce acid that negatively affects tooth enamel. Additionally, it lowers the pH of the oral cavity and increases saliva production, which positively impacts our dental health. Xylitol also facilitates calcium absorption, making it beneficial to include in the diet for people with deficiencies. However, it has the drawback that excessive consumption can cause a laxative effect, so you should control the amount consumed throughout the day.
