Perfect soups for spring
This year's spring has been hot from the start, so it's good to eat light and healthy meals during this time of year to avoid putting a strain on the body. However, we must remember that spring dishes, despite being lighter, are still valuable, nutritious, and delicious. Which options are worth choosing? The answer is simple: soups!
Why soups?
We wrote a lot about the health benefits of soups in one of our March articles, but it's worth recalling some of the most important aspects.
- First of all: Soups are beneficial for a healthy diet. When prepared with vegetable broth, they are not too high in calories but rich in numerous vitamins and minerals.
- Secondly, soups are very filling, so they effectively eliminate the feeling of hunger.
- Thirdly, it is an excellent source of fiber (so important for our body).
- Fourth, it is a great way to add the right amount of vegetables to your daily diet.
- Fifth, soups are definitely quick and easy to prepare.
So let's proceed by presenting a few suggestions that are great for spring and summer meals.
Asparagus cream
We wrote a lot about asparagus in our previous article, pointing out, among other things, that this vegetable is an undisputed spring favorite. We also suggested how to prepare it so it retains its numerous nutritional properties. How do you make asparagus cream? It's really not difficult! All you need is a fixed portion of vegetables (about 1 kg), broth (preferably meat-free), parsley, dill, salt, sugar, and milk. Remember, however, to cook the asparagus heads and stems separately and then drain the mixture in a colander to remove the fibers.
Dill soup
Another soup that's easy to prepare, doesn't take too much time, and is also very inexpensive, as it's not overly ingredient-heavy. What do you need on hand? Vegetable broth, a few carrots, some lovage leaves, pepper, yogurt , and, of course, a few bunches of dill. Important: We'll be topping the soup with yogurt, so be careful not to let the broth turn white. You can eat it with rice, for example, although this dish works great without any additives.
Sorrel soup
Not only is it delicious, but it's also rich in vitamin C. Sorrel soup is light and extremely healthy because it has a positive effect on the digestive system, for example, it can help eliminate flatulence. To prepare it, you'll need broth, chopped sorrel, parsley, carrots, some celery (optional: a few potatoes), and seasonings like salt and pepper. Many people add cream, but we encourage you to skip it. What's the best way to eat sorrel soup? With a hard-boiled egg, of course! It's also a good idea to serve it with mashed potatoes; then a fried egg will also fit into the mix.
Remember : use vegetable broth instead of meat broth, and natural yogurt or milk instead of cream. No roux, but plenty of fresh vegetables. By following these principles, our soups are sure to be aromatic, tasty, and 100% healthy!
