- approx. 1 liter vegetable broth

- 200 ml coconut milk
- 1–2 tablespoons olive oil
- Salt and pepper to taste

Preparation:
- Peel the pumpkin (if necessary), remove the seeds, and cut into cubes.
- Finely chop the onion and garlic, grate the ginger.
- Heat the olive oil in a large pot, sauté the onion in it, then add garlic and ginger.
- Add the pumpkin and spices and briefly sauté to allow the aroma to develop.
- Pour the broth over everything and cook over medium heat for about 20 minutes, until the pumpkin is soft.
- Puree the soup until smooth, add coconut milk, and season with salt and pepper.
- Heat for a few more minutes, but do not bring to a boil.
