Wie bereitet man selbstgemachten gefrorenen Joghurt zu?

Frozen yogurt is a perfect dessert for hot summer days. It's a healthier, lighter, and lower-calorie alternative to traditional ice cream. Homemade frozen yogurt—made by us, using natural ingredients—is even healthier and definitely more delicious. Homemade frozen yogurt will be different from store-bought. Its consistency will vary because it doesn't contain stabilizers, thickeners, emulsifiers, or other additives. Homemade frozen yogurt, perfect for hot weather, contains only natural ingredients. So how do we prepare it?

Why is homemade yogurt healthy?

Traditional yogurt, which originated in the Middle East, was first introduced by the Turks to the Balkans and from there to the rest of Europe. Traditionally prepared yogurt is a source of numerous vitamins, especially vitamins C and B, as well as trace elements such as calcium, potassium, zinc , and phosphorus. It also promotes a healthy bacterial microflora. You can enjoy it as a standalone snack or add it to fresh fruit, nuts, and dried fruit. Yogurt is also great in various recipes, as an addition to soups, sauces, and cocktails. However, the healthiest yogurts are those we make ourselves at home, as store-bought yogurts often contain additives to thicken, fluff, and smooth the yogurt, as well as colorings and flavorings to enhance its flavor. Homemade yogurt is healthy, delicious, and very easy to make. When we make it ourselves, it's fresh, and we are 100% sure of what we're eating.

What are the benefits of homemade yogurt?

Natural yogurt is made using a specific strain of lactic acid bacteria. Bacteria such as Lactobacillus, Bifidobacterium, and Streptococcus act as probiotics and have a positive effect on our bodies. During the fermentation process, they convert lactose, or milk sugar, into lactic acid. The yogurt produced by these bacteria is much easier for us to digest than fresh milk. Homemade yogurt has several additional benefits:

  • Nutrient source:
    • health-promoting probiotic bacteria,
    • Protein, calcium, phosphorus, zinc,
    • lactic acid,
    • B vitamins
  • simple, good composition:
    • Milk,
    • live cultures of yogurt bacteria,
  • without artificial additives:
  • contains no “improvers”, thickeners, stabilizers, milk powder,
  • low-calorie – yogurt based on skimmed milk has only 35 kcal / 100 g, whole milk yogurt – 60 kcal / 100 g,
  • By using starters with bacterial strains, we obtain yogurts with the following properties: strengthening the immune system, supporting the slimming process, rebuilding the bacterial flora after antibiotic therapy, regulating intestinal function, helpful in cases of constipation
  • the possibility to choose your favorite milk – yogurt can be made from any milk – cow, goat, sheep and even from a vegetable drink,
  • Freshness – if we inoculate the milk in the evening, we get fresh yoghurt in time for breakfast in the morning,
  • Taste - natural, refreshing, slightly sour,
  • decent price,

How to make yogurt at home?

To make your own yogurt at home, you'll need milk, of course, but also live bacterial cultures, known as sourdough or starter—available at health food stores. It's best to choose a sourdough starter with the highest number of bacterial cultures. This will ensure the resulting yogurt contains a high concentration of active bacterial cultures. Yogurt made from sourdough contains no thickeners, milk powder, colorings, or sugar. To make it, half-fill the sourdough powder bottle with room-temperature milk, then screw on the cap tightly and shake the bottle until the powder is completely dissolved. The powder should be thoroughly and finely dissolved in the milk. The sourdough starter is already prepared. Now prepare 1 or 2 liters of milk. It must be pasteurized. It must be heated to a temperature of 37-40°C; it's best to check the temperature with a kitchen thermometer. Pour the contents of the starter bottle into the prepared milk in a saucepan and stir thoroughly. Cover the whole thing tightly, insulate it with a blanket or towel, and place it in a warm place. If you prefer, you can pour the milk with bacteria into a lidded jar or thermos and wrap it with a blanket or towel. Then let the mold stand in a warm place for 8-10 hours. After this time, our yogurt is ready, and you can refrigerate it for up to 7 days.

Homemade frozen yogurt, perfect for summer

Once we have healthy, delicious, and artificially produced homemade yogurt, we can prepare a delicious, refreshing dessert – frozen yogurt. A refreshing, refreshing, and at the same time non-greasy meal, made with only fresh, natural ingredients. Frozen yogurt is easiest to make from well-chilled yogurt to which we add frozen fruit. For about 400 ml of yogurt, you'll need about 0.5 kg of frozen fruit. These can be strawberries, raspberries, blueberries, or other favorite frozen fruits. Blend everything, add a tablespoon of honey, and the frozen fruit yogurt is ready.

  • Strawberry frozen yogurt
    • 300 g homemade yogurt,
    • 200 g strawberries,
    • 2 teaspoons lemon or lime juice,
    • Spoon of honey or maple syrup .

Blend strawberries, add lemon or lime juice, and mix with yogurt. Sweeten with honey or sweet syrup. Pour the mixture into a container and place it in the freezer.

  • Homemade frozen lemon yogurt
    • 400 g yogurt,
    • 100 g cream,
    • Sweeteners in the form of honey, maple syrup or agave ,
    • 2 lemons,
    • fresh mint leaves.

Squeeze the juice from thoroughly washed lemons, add chopped fresh mint, and blend everything with yogurt, syrup, and cream using a blender until stiff peaks form. Transfer the mixture to a container and place it in the freezer. Stir the ice cream every 30 minutes for about 3-4 hours.

Summer is the perfect time to make homemade yogurt at home. Healthy, delicious, and light frozen yogurt provides a refreshing treat on the hottest days.
