Spelled ( Triticum spelta ), also called spatula , is an ancient variety of wheat, several thousand years old. Widespread in ancient Rome and medieval Europe, spelled has been almost completely replaced over time by more efficient and easier-to-grow varieties of wheat. Recently, spelled products have experienced a renaissance, as spelled flour is far superior to baking from ordinary flour due to its numerous nutritional properties. Spelled is characterized, among other things, by high protein content, which is the basic building block of tissue and muscles, and fiber, which supports digestive processes, improves intestinal peristalsis; It also boasts content of vitamins - A, group B, K - and mineral salts - manganese, magnesium, zinc, potassium, iron, phosphorus, calcium and selenium.
Organic spelled flour type 2000 is a wholemeal flour, ie comes from the whole spelled grain. It contains gluten, which is easily absorbed by the body. Wholemeal spelled flour can be used on its own to bake bread, cakes, biscuits, pancakes, tarts and pasta.
