Vegetable lamb's lettuce, lamb's lettuce (Valerianella locusta (L.) lat. Em. Betcke) or edible lamb's lettuce is an annual or biennial plant from the valerian family. Its main areas of occurrence are: Europe, Asia Minor and North Africa. It has very low demands on climate and soil. Easy to grow. It grows wild in Poland, almost all over the country.
Lamb's lettuce is used as a culinary vegetable or decoration. This inconspicuous plant with a neutral, slightly nutty taste is a valuable source of vitamins and minerals. Among other things, it offers magnesium, manganese, copper, potassium, selenium, calcium, iron, beta-carotene, B vitamins and vitamin C - a real nutritional bomb, with a low glycemic index and only approx. 22 kcal.
Lamb's lettuce goes perfectly with salads, vegetable smoothies and sandwiches. It is also perfect for meat, casseroles and potatoes.
