In Poland, it is partially protected by law, which means it cannot be harvested in its natural habitat, but it can be cultivated. The name wild garlic comes from a legend that says it was the first meal of bears after ending their hibernation. In recent years, its popularity in cooking has steadily increased.
Wild garlic - culinary uses
One of the main advantages of wild garlic is that it does not leave an unpleasant aroma like ordinary garlic. As a spice, it enriches the flavor of delicate dishes such as quark, egg spreads, and vegetable salads. It enhances the taste of soups like tomato, vegetable, and cucumber soups. Butter mixed with wild garlic is an excellent addition to sandwiches. Aromatic olive oil or delicious garlic pesto can be made from it. It is worth not confusing it with parsley, dill, or chives.
