Ceylon Cinnamon - a noble spice
Ceylon cinnamon [Latin: Cinnamomum verum], also known as true cinnamon, is the most valuable of the cinnamon varieties. Although other types are also available on the market, including the most common Chinese cinnamon (Cinnamomum cassia) due to its low price, Ceylon cinnamon is of first-class quality. Archaeologists confirm that cinnamon was already known in 4000 BC, and the first evidence of this spice was found in a Chinese herbal book from 2700 BC. Ceylon cinnamon comes from two exceptionally sunny islands - Ceylon and Madagascar. The spice is obtained from the bark of the Ceylon cinnamon tree, an evergreen tree that can grow up to 10 meters tall.
