Cabbage is a green plant in the Brassica family. It is native to Europe, particularly the Mediterranean region. Its many species, hybrids, and varieties are cultivated as vegetables in many parts of the world. Cabbage's relatives include Brussels sprouts, broccoli, cauliflower, kohlrabi, and kale.
Contrary to popular belief, cabbage is a healthy, easy-to-digest vegetable. Its bad reputation is largely due to heavy, high-calorie additives like bacon or pork knuckle. 100g of cabbage contains about 40 kcal and is rich in vitamins A, B, C, E, and K, and minerals such as calcium, potassium, magnesium, and iron.
Cabbage can be prepared in many ways. It's most often served raw in salads, but nothing prevents you from boiling, frying, or stewing it. Among the traditional dishes of Polish cuisine that are indispensable, we should mention bigos, cabbage rolls, and cabbage soup. Red cabbage has a red-purple color and a smaller head than its white relative, but it rewards it with a more compact consistency and also contains more vitamins than the former.
