Unroasted buckwheat is the most valuable of all buckwheat groats and its values have been known for a long time. Buckwheat grains are small and creamy. The unroasted ones have a less intense, more subtle flavor than their roasted version.
Buckwheat is a good source of protein that is better absorbed than grains and is also high in fiber to stimulate intestinal peristalsis.
Buckwheat contains unique exogenous amino acids, i.e. those that we must get into the body through food. One of them is lysine, which is necessary for building proteins in muscles and bones and has a positive effect on mental health.
In addition, groats are rich in B vitamins, which have a positive effect on the nervous system, and significant amounts of immune-boosting mineral salts (calcium, phosphorus, magnesium), as well as iron, zinc and iodine.
Buckwheat goes well with meat dishes, stews or sauces. In combination with cheese, vegetables or mushrooms, it can be a delicious filling for pancakes, dumplings or cabbage rolls. Ground groats can also be used to bake bread, cakes or pies.

APPLICATION :
Rinse the groats and add water (2 glasses of water per glass of groats). Put the pot on low heat and cook the groats for about 10-15 minutes. It is better not to mix the groats, they will stick, but if the fire is low, then it should not burn. A teaspoon of oil can be added. Remove the porridge from the fire, cover and place in a warm place to absorb the remaining water. That way, all the water that used to cook the semolina in stays in and doesn't get spilled down the sink.
