Properties of mung beans

This plant from India can be eaten in the form of seeds (even raw) or sprouts. Both parts have a slightly sweet taste. Mung beans contain many elements that are beneficial to humans. The antioxidants contained in the seeds help fight free radicals, which experts say delay the aging process in the body. Interestingly, not all of the vitamin C it contains, which supports immunity, disappears after cooking this plant.

It is also characterized by its high content of vitamins B, A, E, and K. The nutritional proteins and fiber it contains have a positive effect on intestinal function. These two elements are used to make mung beans, which are used in weight-loss diets. The ingredients in mung beans can also effectively support the body in cases of blood pressure problems due to their high potassium content. Another ingredient found in high quantities is folic acid, which supports fetal development.

Mung beans' effects on the human body go hand in hand with their flavor. It's impossible to list all the culinary uses of this plant. Many dishes containing it, due to its origin, belong to Asian cuisine. In addition to salads and soups, mung beans can also serve as a base for vegetarian alternatives to meat dishes, such as burgers or pies. You can serve it with pasta in the form of mixed pesto with herbs and olive oil, or use fresh bean sprouts as a topping.

Adzuki beans - benefits and uses

Like its predecessor, the adzuki bean originates from Asia, primarily Japan and China. It also has similar properties. Its main vitamins are group B vitamins, which can contribute to the proper functioning of the nervous system. The protein contained in this plant is easily digestible, making meals filling but not fattening. Adzuki can also support the urinary system, kidneys, and bladder, and removes excess water from the body. Like mung, it provides a long-lasting feeling of satiety thanks to its high content of valuable plant proteins and fiber.

However, not everyone knows that adzuki beans can also be used in desserts. The carbohydrates they contain are responsible for the vegetable's distinctive flavor. Mixed adzuki paste can be used in desserts, such as cookies or biscuits. It is also suitable as a filling for sweet yeast pastries or as a layering mixture for dough.

Adzuki beans are primarily used in salads and sauces with rice or noodles. Its sweet flavor pairs well with spicier ingredients like paprika or garlic. Like mung beans, it also offers a meat alternative and is used in vegetarian diets .
