The Hokkaido pumpkin (Cucurbita maxima), also called uchiki kuri, is a Japanese variant of the giant pumpkin. It is characterized by a smooth, warm-orange skin and differs from the common pumpkin in its more delicate shape, smaller size, and sweet, slightly nutty or chestnut-like flavor. Hokkaido pumpkin is a rich source of vitamins—vitamins A, B, C, E, and K—and minerals—calcium, potassium, phosphorus, magnesium, iron, and zinc.
Hokkaido pumpkin can be prepared both savory and sweet. It's important to note that it needs to be cooked briefly and doesn't need to be peeled before cooking, as it's soft and tender and doesn't affect the flavor of the dish in any way.
