Selbstgemachter Ketchup, wie macht man ihn?

Nothing tastes as good as homemade jam. On the one hand, we know exactly what's in a jar, and on the other, you can enjoy the benefits of home-cooked food. One of the increasingly popular homemade jams is ketchup. How do you make homemade ketchup without sugar? Is it worth using natural concentrate, tomato juice, or other ingredients?

Ketchup made?

There are many recipes for making homemade ketchup. Moreover, in some versions of this recipe, the main ingredient isn't tomatoes at all! You can use bell peppers, zucchini, and eggplant for homemade ketchup. However, the classic and time-tested recipe tells you how to make homemade ketchup from concentrate. It's worth choosing a concentrate made entirely from natural products, preferably certified organic ingredients. Then you'll know that your homemade ketchup will be not only delicious but also healthy.

Below is the recipe for emergency ketchup—in case you run out of store-bought. However, it's worth substituting homemade ketchup for standard ketchup whenever possible, as we can freely flavor it and it's free of preservatives or flavor enhancers.

Ingredients:

  • 3 tablespoons tomato paste
  • 2 tablespoons boiling water
  • pinch of salt
  • ½ teaspoon of hot ground paprika
  • a pinch of cinnamon
  • flat teaspoon of oregano, basil or other herbs (for flavor)
  • granulated garlic
  • spoon chopped onion

Place the spices in a bowl and cover with boiling water. After a few minutes, add the finely chopped onion and puree, which should be thoroughly combined with the spices. Grind the mixed ingredients and refrigerate the finished sauce for 2 hours.

How to make homemade ketchup without sugar and vinegar?

Homemade ketchup recipes usually contain sugar, which preserves the product, and vinegar, which gives the ketchup its proper flavor. There are also ways to make homemade ketchup without sugar or vinegar.

Ingredients:

  • 2 kg tomatoes
  • sugar onion
  • sour apple
  • ground sweet paprika
  • Oil or olive oil
  • Salt and pepper to taste

Blanch and peel the tomatoes. Grind the apple and onion (also without peel) or press them through a press. Heat two tablespoons of olive oil in a deep pan and fry the garlic seasoned with paprika. Pour the puree into the pan and cook for about an hour until thickened. Season the sauce with salt and pepper and pour into jars. Pasteurize for 3-5 minutes.

Spicy or mild homemade ketchup

Depending on your preference, you can make homemade spicy or mild ketchup, which perfectly complements many dishes. The spiciness can be adjusted when purchasing the concentrate or spices. For those seeking a strong flavor experience, the best solution is to purchase a concentrate with added chili. The Biogo store also offers ready-made ketchups in various versions. However, all are made from natural ingredients, which makes them similar to homemade jams in both composition and flavor.

Thanks to a few tips, you now know how to make homemade ketchup that's healthy and delicious. The properties of tomatoes can help protect the heart and immune system. Treated tomatoes contain lycopene, an antioxidant that can neutralize the effects of free radicals that accelerate the aging process. Additionally, thanks to its vitamin A and C content, ketchup can boost immunity. It's a delicious and healthy addition that can be prepared in a short time!
