Why and how to eat sprouts - recipes
Seed sprouts are plants that are in the early stages of growth. In the kitchen, they are prized for their flavor, but also because they are a real vitamin bomb. They contain invaluable amounts of vitamins, minerals, and enzymes needed for a small seed to grow into a healthy and strong plant. They are a source of vitamins A, C, D, E, K, and PP, as well as B vitamins and minerals such as iron, magnesium, potassium, zinc, calcium, copper, and selenium. They are also a source of fiber, protein, antioxidants, and unsaturated fatty acids. Nutrients from sprouts are easily absorbed by our bodies, are easily digestible, and low in calories.
Sprouts can be obtained not only from Easter cress, but also from radish seeds, broccoli, sunflowers, mung beans, alfalfa, and even beets or lentils. They vary slightly in flavor; some are delicate, others, like mung bean sprouts, are thick. Broccoli , radishes, or broccoli sprouts are spicy, alfalfa and lentil sprouts are mild, and sunflower sprouts have a delicate, nutty flavor. How can we use them every day in the kitchen?
Salmon rolls with radish sprouts
– smoked salmon – a few slices
- Cream cheese
– sour cream – approx. 2 tbsp
- Radish sprouts
– Dill or chives
Mix the cheese with the cream and add chopped dill or chives. Spread the resulting mixture over the salmon slices, sprinkle with radish sprouts, and roll into roulades. Garnish with the dill and the remaining sprouts.

Avocado , red bell pepper, and half a greenhouse cucumber are cut into thin sticks. Dip the rice paper individually in hot water to soften it, then immediately spread it carefully on a flat plate. We place vegetables, sprouts, and shredded salmon on each sheet of paper. Roll everything up into rolls and serve with soy sauce.
Chicken salad
– Chicken breast 0.5 kg
- Salad mix with arugula
- Spinach
– a mix of your favorite sprouts
– Parmesan cheese
– Cherry tomatoes – a handful
- lemon juice
- Oil
– Salt, pepper and paprika powder to taste
Chicken breast fried in olive oil with salt, pepper, and sweet paprika. Once the fried breast has cooled, place the washed salad mix with arugula and spinach on a platter, add the halved tomatoes, drizzle with a little lemon juice, and drizzle with olive oil. Sprinkle the finished salad with grated Parmesan cheese, place the sliced breast on top, and sprinkle the whole thing with the sprout mixture.
Sprouts - eat raw
Sprouts are best eaten raw to retain their valuable nutrients. They can be served in salads, garnished with boiled or deviled eggs, or used as a side dish for sandwiches. Some sprouts, like mung bean sprouts, taste great when stir-fried. It's important to note that almost all sprouts are easy to grow at home and are always on hand. The advantage of homegrown sprouts is that they're always on hand and can be enjoyed directly after picking, without losing any of their nutritional value during transport.
